Calico Bean Pot

This is another recipe from Grandma, and a favourite of Peter's (and everyone else I think). There is a Best of Bridge one-liner at the end.

8 slices bacon
1 cup chopped onion
14 oz. can green beans, drained
14 oz. can lima beans, drained
14 oz. can pork and beans
14 oz. can kidney beans, drained
3/4 cup brown sugar, firmly packed
1/2 cup vinegar
1/2 tsp. garlic salt
1/2 tsp. dry mustard
Pepper to taste

Cut bacon into small pieces and cook until crisp. Cook onion until soft. Add remaining ingredients in a 2 1/2 litre casserole. Bake at 350 for one hour, uncovered. Serves 12.

  1. You can buy the tins of mixed beans and that works well too.
