1/2 cup (105 grams or 3 3/4 ounces) walnut halves or pieces
1/4 cup (45 grams or 1 1/2 ounces) golden raisins
1 tablespoon white wine vinegar
1 tablespoon water
1/4 cup panko (15 grams or 1/2 ounce) or slightly coarse homemade breadcrumbs (from a thin slice of hearty bread)
1 tiny clove garlic, minced or pressed
Coarse or kosher salt
3 tablespoons olive oil
1 bunch (about 14 ounces or 400 grams) tuscan kale (also known as black
or lacinato kale; this is the thinner, flatter leaf variety), washed and
patted dry
2 ounces (55 grams) pecorino cheese, grated or ground in a food processor, which makes it delightfully rubbly (1/2 cup total)
Juice of half a lemon
Freshly ground black pepper or red pepper flakes, to taste
Prepare walnuts: Heat oven to 350. Toast walnuts on a baking sheet for 10 minutes, tossing once. Let cool and coarsely chop.
Prepare raisins: In a small saucepan over low heat, simmer
white wine vinegar, water and raisins for 5 minutes, until plump and
soft. Set aside in liquid.
Prepare crumbs: Toast bread crumbs, garlic and 2 teaspoons of the olive oil in a skillet together with a pinch of salt until golden. Set aside.
Prepare kale: Trim heavy stems off kale and remove ribs. I
always find removing the ribs annoying with a knife, because the leaves
want to roll in on the knife and make it hard to get a clean cut.
Instead, I’ve taken to tearing the ribs off with my fingers, which is
much easier for me. Stack sections of leaves and roll them into a tube,
then cut them into very thin ribbons crosswise.
Assemble salad: Put kale in a large bowl. Add pecorino,
walnuts and raisins (leaving any leftover vinegar mixture in dish),
remaining 2 tablespoons olive oil and lemon juice and toss until all the
kale ribbons are coated. Taste and adjust seasonings with salt, pepper
and some of the reserved vinegar mixture from the raisins, if needed.
Let sit for 10 minutes before serving, if you can, as it helps the
ingredients come together. Just before serving, toss with breadcrumbs
and, if needed, a final 1 teaspoon drizzle of olive oil.

Banana (Plantain) Soup
After we enjoyed this soup in Curacao, Paul made this from a recipe by HELMI SMEULDERS
INGREDIENTS
- 50g
butter
- 4 very
ripe (black) plantains, peeled and roughly chopped
- 100g
leeks, roughly chopped
- 150g
carrots, roughly chopped
- 75g red
onion, roughly chopped
- 1250ml
water
- 25g powdered
chicken stock
- 1 stalk
of celery
- 1 sprig
of rosemary
- 1 sprig
of thyme
- 1 bay
leave
- 1
teaspoon ground cinnamon
- 1
teaspoon ground cumin
- 1
tablespoon sugar
- 1 small
Scotch Bonnet Chili, whole, pierced onto a bamboo skewer
- 200ml
heavy whipping cream
- 200ml
coconut milk
- 200ml
orange juice
- ground
black pepper & salt
INSTRUCTIONS
- Melt the
butter in a large stock pot over medium heat and add the plantain, leek,
carrot, onion and celery. Cover with a lid and let the vegetables sweat
for 5 minutes while stirring occasionally.
- Add the
water, chicken stock, celery, rosemary, thyme, bay leave, spices, sugar
and chili. Stir well and bring to the boil. Reduce the heat and let simmer
for 1 hour.
- Take the
soup of the heat and remove the rosemary, thyme, bay leave and chili. Let
stand until cool enough to handle and puree the soup in a blender or food
processor. Add the cream, coconut milk and orange juice and stir to
combine. Put back on the heat and season to taste with pepper and salt.
Divide the soup over 4 bowls and garnish with a fried plantain chip and
some chopped parsley.

Warm Sesame Crusted Goat Cheese
This was make for Deb deBakkers 65th birthday dinner and was a great hit with everyone.
120 to 130 gm creamy goat cheese (no rind or coating)--a log or reshape it to be a round
2 tbsp olive oil
1/2 tsp hot Asian chili oil (I did not have this and omitted; instead I put a few chili flakes in the oil)
2 tbsp bread crumbs
2 tbsp sesame seeds (I had mixed sesame seeds, light and black)
2 tsp brown sugar
2 tsp caraway seeds
1 tsp chili powder
1 tsp cumin
1/2 tsp salt
1. Preheat oven to 350
2. Mix oils in a bowl large enough to hold the cheese
3. In another medium size bowl, mix together the dry ingredients
4. To reshape a goat cheese log into a round, wrap in wax paper or plastic wrap and reshape. Chill.
5. Roll the cheese in the oil mixture, coating all sides. Then roll in the see mixture to coat. Pat coating onto any bare spots.
6. Bake cheese in oven proof dish for 5 minutes.
Serve warm with bread or crackers (I made crostini)

Grilled Provolone Cheese
This adaptation of an Argentinian recipe came from my friend Wendy Kirkpatrick. Many a delicious meal has been eaten at her home (with Murray Milne). This appetizer is delicious, simple and unusual.
(Grill cheese in a non-stick pan on the stove).
Two 1/4 in. thick rounds of Provolone
2 tbsp olive oil
1/2 tsp dried oregano
1/2 tsp cracked pepper
6 slices of Serrano ham
Heat large non-stick skillet over medium-high heat. Brush cheese with olive oil and fry for 45 seconds to 1 minute or until a brown crust has formed on the bottom and the cheese has begun to melt all over. Let pan sit to cool off heat for 2 minutes or until cheese has cooled enough in the pan to remove from pan in 1 piece. Slide cheese out of pan and flip over so that browned crust is on top. Sprinkle with oregano and pepper.
Lovely served on a board with ham and break or crackers.

Cherry and Pistaachio Bake-Once Biscotti
This cookie has become a Christmas favourite that I make with my daughter Bev and friend Wendy.
The unique feature is that it only needs to be baked once (not twice). That makes them much quicker to bake.
(The dried cherries can be found at Bulk Barn. You can shell the pistachios yourself or buy them shelled.)
1 1/2 ups granulated sugar
8 large egg yolks plus 4 large eggs
1/2 tsp salt
4 1/2 cups all purpose flour
1 tsp baking powder
2 cups dried tart cherries
2 cups roasted salted pistachios
1 tbsp water
BEAT the sugar, egg yolks, 3 whole eggs, and salt with an electric stand mixer fitted with the whisk attachment on medium-high until pale yellow and thick, about 5 minutes. Switch to the paddle attachment and, with the mixer on low, gradually add the flour and baking powder, beating until well combined 2-3 minutes. Add the cherries and pistachios and beat well until just combined. Divide the dough in half and wrap the halves with plastic wrap. Chill 1 hour.
PREHEAT oven to 325 F. Line 2 baking sheets with parchment paper. Shape the dough into two 12 X 5 inch logs and place on the baking sheets. Whisk together the water and the remaining egg; brush the mixture on the logs.
BAKE until golden brown, 35-40 minutes. Cool on the baking sheets 10 minutes. Transfer to a cutting board and cut each loaf into 1/2 slices. Cool completely about 1 hour.

Sheila Clark's Pork Marinade
Sheila made this marinade when Donna Taylor and I were visiting her in Prince George BC in June 2018. Her husband Paul did the grilling. Yum Yum.
1/2 c. brown sugar
1/2 c. soy sauce
1/4 c. pineapple juice
2 garlic cloves, minced
salt
pepper
1 tbsp corn starch mixed with 1 tbsp cold water (to thicken)
Mix all together and marinate pork tenderloin for a while. BBQ or bake in the over.

Grilled Broccoli (or Oven roasted)
Ingredients
6 c fresh broccoli spears
2 tbsp plus 1 1/2 tsp lemon juice
2 tbsp olive oil
1/4 tsp salt
1/4 tsp pepper
3/4 c grated Parmesan cheese
Shaved Parmesan cheese and purple basil leaves optional
Directions:
1. Place broccoli in a large bowl. Combine lemon juice, oil, salt and pepper; drizzle over broccoli and toss to coat. Let stand for 30 minutes.
2. Toss broccoli, then drain marinade. Place cheese in a large resealable plastic bag. Add broccoli, a few pieces at a time and shake to coat.
3. Oil the grill with cooking oil. Prepare the grill for indirect heat using a drip pan. Place broccoli over drip pan and grill, covered, over indirect medium heat for 8-10 minutes on each side or until crisp-tender. If desired, garnish with shaved Parmesan and fresh basil.
Mary Lou also roasted this in the oven on a cookie sheet and it was delicious.

This is an old favourite from Irene Nickerson's collection of recipes. I found it and baked it last week for my daughter Beverley's birthday. The method is lacking detail!
First step
1/2 c white sugar
1/2 c butter
3 egg yolks (well beaten)
4 tbsp. milk
1 c flour
1 tsp baking powder
Spread in two round layer tins
Second step
4 egg whites beaten stiff
Add 1 c white sugar and beat well
Spread this layer over batter
Sprinkle with 1 c chopped nuts (I use Almonds)
Bake 20 minutes at 350
Third Step:
Cool on rack and put together with filling
Filling:
1 egg yolk

Jamie Oliver's Simple Houmous
So easy and much more flavourful then commercially purchased houmous.
Ingredients:
1 400 g tin of chickpeas
1 small clove of garlic
1 tbsp tahini
1 lemon
extra virgin olive oil
Method
1. Drain, rinse and tip the chickpeas into the food processor.
2. Peel and add the garlic, then add the tahini, a good squeeze of lemon juice and 1 tbsp olive oil.
3. Season with a pinch of sea salt, then pop the lid on processor and blitz.
4. Use a spatula to scrape the houmous down the sides of the bowl, then blitz again until smooth.
5. Have a taste and add more lemon juice or a splash of water to loosen, if needed, and then transfer to a serving bowl.
6. Serve with sliced crunchy veg. such as carrots, cucumbers, radishes or peppers and some warm flatbreads.

Canadian Winter Pureed Vegetable Soup (Pick your vegetable)
This recipe came from Irene Nickerson who was a great maker and lover of soup.
Serves 4-6
Prep Time: 15 minutes
Total time: 45 minutes
Ingredients
2 tbsp olive oil
1 onion, coarsely chopped
coarse salt and ground pepper
vegetable of choice (see list below)
1 can (14.5) oz reduced-sodium chicken broth
1 to 3 tsp fresh lemon juice
Pick your vegetable:
Parsnip 2 1/2 pounds peeled and cut into 1 in chunks
Carrot 2 1/2 pounds peeled and cut into 1 in chunks
Broccoli 2 pounds cut into florets, stalks peeled and cut into1/2 in chunks, plus 1 baking potato peeled and cut into 1 in chunks
Celery Root 2 pounds (also called celeriac) peeled and cut into 1 in chunks
Beet 2 pounds, peeled and cut into 1 in chunks
Mushroom 20 oz. button mushrooms, trimmed and quartered plus 1 baking potato peeled and cut into 1 in chunks
Butternut Squash 3 pounds, peeled, seeded and cut into 1 in chunks
Cauliflower 2 1/2 pounds, cored and cut into florets
Celery 2 pounds cut into 1 inch thick pieces plus 1 baking potato peeled and cut into 1 in chunks.
Method:
In a large Dutch over or pot, heat oil over medium. Add onion. Season with salt. Cook, stirring occasionally until softened, 5-7 min
Add vegetable, broth and enough water (4 to 5 cups) to cover. Bring to a boil; reduce heat to medium and simmer until vegetable is tender about 20 minutes.
Working in batches, puree broth and vegetables in blender until smooth. Fill blender only half way to prevent spattering and allow heat to escape. Transfer soup to a clean pot as you work.
Adjust soup's consistency with a little water if necessary. Season with salt, pepper and lemon juice to taste.
Note: These soups freeze very well. The lemon is the secret ingredient. Don't skip it. Squash is my favorite although I have tried cauliflower, broccoli, carrot and they are all great.
Freezing tip: Freeze flat in a zip lock. Very compact.

Swedish Roasted Root Vegetables
This recipe was adapted from one in a cookbook called "Simply Swedish: Flavours for Every Season" written by Margareta Schildt Landgren. The cookbook was given to us by our Swedish cousin Helena Rudberg summer when John and I visited her in Sweden. What is unique about this recipe is the honey mixed into the oil that is drizzled over the vegetables before baking. Delicious.

Mary Lou's Sleeping Giant Park Muffins
These are the muffins I make each year for the Sleeping Giant Park cross country ski weekend. John and I go each year, end of February, with 10 others and we rent two cabins. Party party...and ski too.
I am making these muffins now to take this upcoming weekend!
Recipe makes 12 large muffins (doubles well)
Dry ingredients:
1/2 cup finely chopped nuts or 1/2 cup coconut or a mixture of coconuts and nuts
1 cup bran
1 1/2 cup all purpose flour
1 tbsp baking powder
1/2 tsp baking soda
1 scant tsp cinnamon
1/4 tsp nutmeg
Wet ingredients:
2 eggs, beaten
1 cup milk or buttermilk (I use buttermilk, I buy it powdered at the bulk food store)
2/3 cups brown sugar
2/3 canola oil (can be reduced)
1 tbsp vanilla
1/2 tsp salt
Fruit:
1 cup total in any variation or combination (I love this flexibility for the recipe)
grated carrot and pureed tin pineapple
grated carrot and grated apple (skin on)
1 whole orange pureed in processor and pureed tinned pineapple
grated carrots and pureed tinned apricots
pureed peaches (fresh or tinned)
fresh or frozen blueberries (what I use always)
fresh or frozen strawberries
cooked cranberries
Method:
Preheat oven to 350 degrees. Grease muffin tins or use paper liners.
Combine all dry ingredients in one bowl. Combine all wet ingredients in another bowl.
Add dry ingredients to wet and fold gently but thoroughly. Do not over mix.
Add fruit.
Bake for approximately 30 minutes (mine normally take less time)

Combine all dry ingredients in one bowl. Combine all wet ingredients in another bowl.
Add dry ingredients to wet and fold gently but thoroughly. Do not over mix.
Add fruit.
Bake for approximately 30 minutes (mine normally take less time)

Four Corners Lentil Soup
Ingredients
- 1 tablespoon coconut oil or
ghee
- 2 large onions or leeks,
white and pale-green parts only, chopped
- 5 garlic cloves, minced
- 1 tablespoon minced fresh
ginger
- Fine sea salt
- 1 tablespoon ground cumin
- 1/4 teaspoon cayenne
pepper, or more to taste
- 1 (15-ounce / 400g) can
whole tomatoes, or 5 large fresh tomatoes chopped
- 1 small organic lemon,
sliced
- 1 cup / 200g red lentils,
picked over and rinsed very well (soaked, if possible)
- 4 cups / 1 liter vegetable
broth
- Pure maple syrup or raw
honey (optional)
- Fresh cilantro leaves,
sliced spring onions, or flat-leaf parsley leaves, for garnish
Preparation
- Heat the oil in a medium
pot, add the onions, garlic, and ginger, and sauté for 5 minutes, until
soft. Add a pinch of salt, the cumin, and the cayenne, and stir for
another minute or so, until fragrant.
- Add the tomatoes, 3
slices of lemon, and the lentils. Then add the vegetable broth and stir
well. Cover the pot and bring the mixture to a boil. Reduce the heat and
simmer for about 30 minutes, until the lentils are soft. Add a squirt of
maple syrup to balance the flavor, if desired.
- Serve hot, garnished
with the cilantro, spring onions, or parsley, and topped with a slice of
lemon.

Rhubarb Cake
Another delicious Rhubarb
dessert! Mom (Shan) has been making this favourite for a long time and since I
tasted it while in Thunder Bay a few years ago, now our household is enjoying
it too. It is especially tasty when served slightly warm with vanilla ice
cream or whipped cream.
Rhubarb Cake
Cake batter:
1 ½ cups white sugar
½ cup softened butter
1 egg beaten
2 cups flour
1 tsp baking soda in
1 cup sour cream (will increase in volume after a short while)
1 tsp vanilla
1 tsp cinnamon
2 cups rhubarb
Topping:
¼ c softened butter
½ c brown sugar
½ c coconut
Cream ½ cup butter with sugar. Add egg, flour, baking soda/sour
cream mixture.
Blend in vanilla & cinnamon. Fold in rhubarb.
Spread evenly in a greased 9" x 13" (we use Pyrex) pan.
Mix topping ingredients and spread gently on top of batter.
Bake at 350 F for 35 min or ‘til done.

Luka’s Scrambled Eggs with Cheese
Ingredients and supplies:
½ a cup of cheese, butter, 6 eggs, a frying pan, ¼ cup of
milk, salt, chives, pepper, a non melting spatula, ½ an onion, a grater, a knife,
a fork or a whisk and a bowl.
1. Grate cheese
2. Small dice the onions
3. Crack all 6 eggs into the bowl
4. Whisk the eggs
5. Add salt, pepper and milk
6. Whisk salt, pepper, milk and eggs
7. Put the butter in pan
8. Turn burner on medium low
9. Put in the onions until they start turning brown
10. Pour the eggs, milk, salt and pepper into the pan
11. Cook for 4 minutes and scrape the bottom of the pan
while the eggs cook
12. Turn of burner
13. Add cheese and stir until cheese melts
14. Add chives
15. Serve
Luka’s berry fruit smoothie
Ingredients and supplies:
½ A cup of milk, A measuring cup that is at least 1
cup, A blender, ½ of a cup of frozen blackberries, 1 Cup of frozen blueberries,
½ cup of canned apricots, A tablespoon, 1 cup of yogurt,1tablespoon of honey, ½ a
cup of frozen cherries.
How to make:
1. Use the measuring cup to measure out the
ingredients.
2. Put all
the ingredients in the blender.
3. Put blender on LOW for 30 seconds. Then put
blender on HIGH for 30 seconds then turn off blender and drink.
Rhubarb Sponge Pudding
Mary Lou and
John hosted a lovely dinner on July 1 to celebrate Canada Day with some of
their out-of-town visitors. The delicious dinner was followed by a yummy
dessert made with rhubarb from their garden.
Ingredients:
1 pound (about 3
cups) rhubarb, cut in 1-inch pieces
1/3 cup
Lyle’s Golden Syrup (or substitute maple syrup)
½ cup
room-temperature butter, diced
½ cup granulated
sugar
2 eggs, beaten
together
¾ cup
self-rising flour
Method:
Preheat oven to
375 F.
Place rhubarb in
a well-buttered deep-dish 9-inch pie plate or ovenproof gratin. Drizzle syrup
on top.
Beat butter and
sugar together in a bowl with a hand mixer until light and fluffy. Beat in
eggs. Gently fold in flour. Spread mixture on top of rhubarb.
Bake for 30 to
35 minutes or until a toothpick comes out clean.
Serve while
still warm with custard (Bird’s British custard powder recommended), whipping
cream or ice cream.
Serves 6

Rub for Ribs
We had ribs when Patty was in town recently. She asked for the recipe for the rub, which was approximately as follows.
1 tablespoon cumin
1 tablespoon paprika
1 tablespoon granulated garlic
1 tablespoon granulated onion
1 tablespoon chili powder
1 tablespoon brown sugar
2 tablespoons kosher salt
1 teaspoon cayenne pepper
1 teaspoon black pepper
1 teaspoon white pepper
Directions
Combine
all ingredients in a large bowl and mix well. Store in an airtight container.

Hamburger Stew
From Auntie Shan (as discussed at Irene's 88th birthday):
This is the perfect "recipeless" recipe.......
Ingredients: hamburger (extra lean or drained regular), Chopped onion
Brown these together.... then " throw in " chopped carrot,celery,potatoes, salt & pepper
Add water to just keep it all moist enough to bubble around the veggies and meat...I added several times sparingly ,after the first cup or so....(.it all depends on your quantities)
I usually add about a cup of frozen mixed vegetables for the peas& corn & green beans .
I then add a can of sliced mushrooms drained And a sprinkle of Worcestershire Sauce and finally ....a can of Cream of Mushroom Soup.....the soup and liquid I keep "thick" like gravy ...Patty's version is a thinner broth.....which needs a spoon.....
My sister Irene's version.....is all but the potatoes, and she cooks & mashes them separately....and then puts the meat over or under the potatoes......I wants to mash the potato pieces in the mix as I eat it.....it was the first table food for all my Mom's grand kids and it's still a very favourite "comfort food" for most of the Forstrom descendants ....It's a wonderful easy and relatively quick meal after work.... Could probably be done in a crockpot.
Hope this isn't too vague, but I don't know of a written version....
